Accolades & Legacy

Three Michelin Stars: One of a select few chefs in British history to achieve and maintain the absolute highest tier of culinary recognition.

The Best Chef Legend Award (2018): Awarded by his global peers to celebrate his permanent impact on international gastronomy.

Lifetime Achievement Awards: Bestowed with the AA Lifetime Achievement Award and the Catey Lifetime Achievement Award for his extraordinary service to hospitality.

The Ultimate Mentor: His greatest legacy may be his kitchen alumni. Koffmann famously mentored Gordon Ramsay, Marco Pierre White, Marcus Wareing, Tom Aikens, Jason Atherton, and Tom Kitchin, who collectively went on to define modern British dining with dozens of Michelin stars of their own.

Pierre Koffmann (born August 21, 1948) is a foundational titan of modern British fine dining. Originally hailing from Tarbes, France, Koffmann arrived in the United Kingdom in 1970 and went on to achieve the absolute pinnacle of culinary success. Renowned for his uncompromising devotion to the robust, earthy flavours of his native Gascony, Koffmann changed the landscape of gastronomy not only through his own legendary kitchens but also by mentoring the most celebrated generation of modern British and international culinary stars.

Iconic Restaurants

Le Gavroche & The Waterside Inn (1070s): Koffmann began his UK journey under Michel and Albert Roux. He served as the very first head chef of the Waterside Inn in Bray, successfully anchoring the kitchen as it secured its first two Michelin stars.

La Tante Claire (1977–2004): His magnum opus. Opened in Royal Hospital Road, Chelsea, this intimate temple of gastronomy earned its prestigious third Michelin star in 1983. It later relocated to The Berkeley Hotel in Knightsbridge in 1998, continuing its run of legendary excellence until its closure in 2004.

Koffmann’s at The Berkeley (2010–2016): Coming out of a brief retirement, Koffmann made a highly anticipated return to launch a more relaxed, provincial French brasserie, proving that his classic techniques remained timeless.

Signature Dishes

Koffmann is celebrated for elevating rustic, often discarded ingredients into works of absolute luxury. His most legendary creations include:

Pied de Cochon aux Morilles: His ultimate signature dish—a pig’s trotter painstakingly deboned, braised, stuffed with a delicate chicken mousseline, sweetbreads, and wild morel mushrooms.

Dungarvan Oysters with Crepinette: A masterful juxtaposition of fresh, cold Irish oysters served alongside warm, rich, spiced pork sausage patties.

Gascon Daube of Beef: A deeply rich, slow-cooked classic heavily infused with red wine, Armagnac, and carrots, demonstrating the essence of French comfort cuisine.

Pistachio Soufflé with Hot Chocolate Sauce: A sublime, perfectly risen dessert classic that remained a fixture of his menus for decades.

Published Books

Memories of Gascony (1990): A beautifully written biographical cookbook detailing his childhood, his grandmother Camille’s rustic farm kitchen, and the regional dishes that shaped his culinary philosophy.

La Tante Claire: Recipes from a Master Chef (1992): A rare, definitive masterclass detailing the precise, complex recipes that defined his three-Michelin-starred flagship establishment.

Classic Koffmann (2016): An elegant retrospective that won the James Beard Foundation Award, compiling 50 years of timeless French provincial cooking tailored for the contemporary audience.
