It was in San Francisco that Bobby had the rare opportunity to develop his professional expertise under the tutelage of Hubert Keller (Fleur de Lys), and Elka Gilmore and Traci des Jardins (Elka, The Miyako Hotel). Continually practicing and refining the techniques he learned, Bobby soon developed his own singular style, traversing the Pacific divide to blend fresh Asian flavours with a distinctive and health-conscious Californian vibe.

After a short time in Ho Chi Minh City, Bobby moved North and spent many years as a street-food aficionado, exploring the back-alleys and food-carts, diligently cataloguing traditional family recipes and unlocking secrets normally shared only from generation to generation.

Bobby opened his first restaurant, Saigon Joe’s, soon followed by Miro in Hanoi, where he grew a loyal following and firmly established his reputation as a talented Chef. It was at Red Onion that Bobby first achieved international recognition for his legendary hospitality and his flair as a Restaurateur.
As he continued learning about Vietnamese cuisine, Bobby worked hard to perfect his technique, crafting inspired, modern interpretations of traditional dishes while remaining faithful to authentic flavour profiles. He opened the eponymous ’Restaurant Bobby Chinn’ in Hanoi, 2001.

The accolades rolled in with Restaurant Bobby Chinn earning awards for ‘Best Bar in Hanoi’ (Vietnam Economic Times, 2002), ‘Best Fusion Restaurant’ (Vietnam Economic Times, 2003), ‘Wine Spectator Award of Excellence’ (2004-2012) and the highly coveted Five-Diamonds Award of which Bobby Chinn was the only recipient in Vietnam at the time.

Bobby’s gastronomic revolution continued with the launch of sister restaurant ‘Bobby Chinn Saigon’ in Ho Chi Minh City, 2011, and in 2014 Bobby relocated to London where he is credited with elevating modern Vietnamese cuisine
